KADAI PANEER...

the famous punjabi dish "kadai paneer"... paneer being everyone's favorite and paneer is that special ingredient that makes cooking easy and adds magic to the dishes. i never knew that this recipe is so easy to cook until i saw this recipe in a recent tv show... i prepared this dish with little changes and it turned out really well... though many think and also prefer roti's with kadai paneer, it tastes great even with variety rice  and also with plain basmathi rice. my mom had this dish with both rice and roti, loved it with rice rather than roti...

TIME TAKEN: 30 MINS    SERVES: 4

INGREDIENTS:

PANEER (CUT INTO CUBES)
200 GRAMS
ONIONS
2 MEDIUM (FINELY CHOPPED)
GINGER GARLIC PASTE
2 TSPS.
TOMATOES
3 MEDIUM (FINELY CHOPPED)
RED CHILI POWDER
1 TSP
TURMERIC POWDER
A PINCH
SALT
TO TASTE
KASOORI METHI
1 TSP (CRUSHED)
CAPSICUM
1 (CUT INTO BLOCKS)
ONIONS
1 MEDIUM (CUT INTO BLOCKS)
FOR MASALA:

CORIANDER SEEDS
2 TBSPS.
CUMIN (JEERA) SEEDS
1 TSP
RED CHILI’S
2
CLOVES
4 – 5
CINNAMON STICKS
2 (1 INCH EACH)

METHOD:

 Ø  Heat a kadai, add all the ingredients mentioned for masala and roast them for 3 – 5 mins on a medium flame until you get the aroma of the roasted ingredients. Allow it to cool and grind it into fine powder.


 Ø  Now heat oil in a kadai, add chopped onions and fry till light brown. Now add ginger garlic paste and saute it and then add chopped tomatoes and stir it. Now add turmeric powder, red chili powder, salt and 1/4th cup water stir it and cook till the tomatoes are mashed and completely cooked.


 Ø  Once the tomatoes are cooked, add 2 tsps. Of grounded masala powder and kasoori methi and cook it for 2 – 3 mins and add paneer, stir it and cook for 2 mins on a medium flame. Now add cut capsicum and onion pieces, and saute the curry for 1 – 2 mins on a high flame and turn off the gas.


Serve it hot with roti’s or pulao’s and enjoy your meal…

SUGGESTIONS:

 ü  To make the paneer soft, add paneer to hot water and remove them immedietely. This makes the paneer soft.

 ü  You can also add tomato puree instead of chopped tomatoes according your desire.
