METHOD:

Ø  In a large vessel, add salt and water and allow it boil. Off the gas, add cauliflower pieces and rest it for 5 mins and drain all the water.

Ø  In another bowl, add maida, corn flour, salt, black pepper powder and food color and make it into a thick batter with little water. Add the drained cauliflower pieces and mix it well with the batter.  Heat oil for deep fry, drop the cauliflower pieces one by one and fry till brown and transfer them on to a strainer or tissue paper.

Ø  In a small bowl add ½ tsp sugar, 1 tsp corn flour and dissolve it in ½ cup water.

Ø  Now heat oil in a thick bottom kadai, add chopped garlic cloves, green chili and onions and saute it till the raw smell disappears, move them aside and add soya sauce and cook till it evaporates. Now add the corn flour mix, ajinamoto, a pinch of food colour (optional) and cook till it gets thicker on a low flame. Now add tomato sauce, green chili sauce, fried cauliflower and stir it until everything gets mixed well.

Serve it hot with tomato ketchup…

SUGGESTIONS:

ü  You can add fresh coriander in the end for garnish. Since I didn’t have it so I used chopped green chili’s for garnish.

ü  While preparing the batter do not make it too loose because when you add cauliflower to the batter it becomes loose. So make thick batter.

ü  Green chili mentioned in step 4 is optional.

ü  You can also add more tomato sauce if desired.
