ONION SAMOSA...

onion samosa's... my favorite from childhood days but sadly had opportunity to have them very rarely (may be only becoz i get them very rarely i love them so much). 4 years back one of my uncle got these onion samosa's from a very famous shop in nellore called "baba samosa's". from then on i kept trying them at home but never got the exact taste and i used to get very disappointed. few months back i saw the recipe of chef sanjay in his personal website and followed that recipe with little changes and the samosa's turned out so well and exactly matched to the taste of "baba samosa's" and from then on i prepare them very frequently at home... hope u like it...<3 <3 <3




PREP TIME: 30 MINS, COOKING TIME: 15 MINS, MAKES: 30 MINI SAMASO’S

INGREDIENTS:

FOR DOUGH:

MAIDA (REFINED FLOUR)
1 CUP
HOT OIL
1 TBSPS.
SALT
A PINCH
WATER
AS REQUIRED TO MAKE DOUGH
FOR STUFFING:

ONIONS (FINELY SLICED)
2 MEDIUM
GREEN CHILI (FINELY CHOPPED)
1
CARROT (GRATED)
½ OR 1 SMALL
SALT
TO TASTE
OIL
FOR DEEP FRY

METHOD:

 Ø  In a bowl, add maida, hot oil, salt and mix everything together. Now add required water and make it into soft dough. Rest it for 15 mins.

 

 Ø  In another bowl, add onions, green chili, carrot and salt and mix everything well.


 Ø  Make small gooseberry size balls and spread them into thin sheets on a flat surface using rolling pin. Cut the sheet into two and make each of it into cone as shown in the pic below.


 Ø  Now fill in the cone with the onion mix and lock the corners using water. (just wet the corners so that they stick properly).


 Ø  Heat oil for deep fry, drop the samosa’s one by one and fry till light brown and transfer them on to a strainer. Once all the samosa’s are fried, drop the samosa’s into oil for second time and fry till golden brown and transfer them onto a tissue paper.


Yummy, crunchy samosa’s are ready to serve with hot tea…

SUGGESTIONS:

ü  Double frying is not a compulsory, you can fry samosa’s only once if desired. Double frying gives a crunchy bite to the samosa’s and taste good.

ü  Add maximum onions and very less amount of grated carrot. If more carrot is added the taste of onions reduces.
