KAKARAKAI PACHADI

pickle's without which our meals are incomplete.. here is a different pickle made using bitter gaurd..  




TIME TAKEN: 30MINS
INGREDIENTS

BITTER GUARD   : 200 GRAMS
ONION                 : 1 LARGE,   TOMATO    : 2 LARGE
RED CHILI POWDER: 30 GRAMS, SALT    : TO TASTE
OIL                        : 100 ml
METHI SEEDS      : 1tsp
MUSTARD SEEDS: 1tsp
TAMARIND PASTE: 3 tbsp
GARLIC CLOVES : 10
CURRY LEAVES : 10

METHOD

Step 1: Heat the oil in a pan and deep fry peeled and chopped bitter guard until brown. In other pan heat oil, add chopped onions fry till brown, add tomatoes cook till soft, off the stove add tamarind paste and let it cool.



Step 2: Roast and grind the mustard seeds and methi seeds into powder, keep it aside. Grind cooked tomatoes and onions into a fine paste, mix fried bitter guard, mustard and methi powder, chili powder and salt.



Step 3: Heat 3 – 4 spoons of oil in a pan, temper mustard seeds, 1tsp black gram, 1tsp bengal gram, curry leaves and garlic cloves. Add the tempering to the above mix. Spicy kakarakai pachadi is ready.
