METHOD:
Ø
Heat 2 tbsp of oil in a pan, fry the red chilli’s
and keep them aside. Now add chopped onions in the oil and fry them till brown.
Ø
Grind fried onions, red chilli’s, coriander
powder, jeera powder, salt and turmeric powder together into a fine paste.
Ø Slit each brinjal into four sections lengthwise from the base
without cutting off the crown (as shown in the pic below). Fill the prepared
masala in the slit brinjal’ s (carefully without breaking it).
Ø Heat oil in a kadai, sauté the ginger garlic paste. Now add the
stuffed brinjal’s, fry them for 2 - 3 mins, add excess masala, ½ cup water to the kadai, stir it and cove it
with a lid.
Ø Allow it to cook on a low flame until the brinjal’s are completely
soft and cooked. Stir it periodically without breaking the brinjal’s.
