now is there any1 who don't like pani puri... the favorite street food of everyone... the second i think about pani puri my mouth starts watering... i love pani puri sooooo much... wen ever me and my sisters meet in bangalore, we make sure that we go have panipuri at our favorite shop...
many don't prefer having pani puri on roadside because they are not sure of the water used in making pani.. so now everyone can prepare this yummy tasty recipe at home and njoy it with out any doubts...
TIME TAKEN: 30 MINS, SERVES: 5 -6
INGREDIENTS:
PANI PURI

LEADING SUPER MARKETS, I GET THEM IN NILGIRIS EVERYTIME)

250 GRAMS

GREEN PEAS
|
QUARTER CUP
|
ONIONS
|
2 MEDIUM (FINELY CHOPPED)
|
FRESH CORIANDER
|
4 – 5 tbsps. (FINELY CHOPPED)

SALT

TO TASTE
|
CHILLI POWDER
|
1 tsp
|
ROASTED JEERA (CUMIN) POWDER

½ tsp

FOR PANI:
|
|
PUDHINA (MINT LEAVES)
|
1 CUP

FRESH CORIANDER

METHOD:
Ø Peel
the potatoes and Pressure cook potatoes and peas with 1 ½ cup water for 3 – 4 whistles.
Once the pressure is released, open the lid, transfer the cooked potatoes and
peas into a plate and mash them, add chilli powder, salt, roasted cumin powder,
chopped onions, fresh coriander and mix everything together.
Ø For
pani, soak the tamarind in warm water and extract the juice from it. Wash the
mint leaves, fresh coriander and green chilli’s and grind them together. Add the
grounded pudhina paste to the tamarind juice and add 2 cups water, salt and
black salt to it and mix it well. Taste the pani and if u feel tamarind is more
in it add water accordingly and adjust it to your taste.
Ø For sweet
chutney, 3 tbsp of thick tamarind paste, 30 grams jaggery, 1 tsp chili powder,
1 tsp black salt, roasted and crushed cumin seeds, salt to taste, half cup
water and boil everything together until it turns thick.
This is an optional, chat items are always served with sweet
sauce. Sweet pani is served for pani puri. You can add water to the above
mentioned sweet sauce and use it as sweet pani. Usaually I add ½ tsp of the
sweet sauce to the puri’s directly on top of the stuff and serve them.
Yummy yummy panipuri is ready to
serve…
SUGGESTIONS:
ü Do
not deep the puri’s for longer time in water, since they will turn soft and
break.
ü You
can also squeeze lemon in the pani prepared.
ü There
is panipuri masala available in market which you can add to the pani. I don’t use
it since I don’t like the taste.
