VEG FRIED RICE

looking for something different for dinner... try this indo - china fried rice...




TIME TAKEN: 30 MINS, SERVES: 3

INGREDIENTS:

RICE
1 CUP
SPRING ONIONS
1 BUNCH
CARROTS
1/4th CUP (FINELY CHOPPED)
GREEN BEANS
1/4th CUP (FINELY CHOPPED)
SOYA SAUCE
2 tbsp
SALT
TO TASTE
GREEN CHILI’S
2 (FINELY CHOPPED)
GARLIC CLOVES
6 (FINELY CHOPPED)
CAPSICUM
1 (FINELY CHOPPED)
PEPPER
1 tbsp

METHOD:
  • Wash and soak the rice for 15 - 20 mins. Add salt and 2 tsp of oil to the soaked rice and cook the rice.
  •  Heat oil in a kadai/ pan, saute chopped green chili's, garlic cloves, add separated white from spring onions and fry for 2 mins.

  • Now add chopped carrots and beans, cook till veggies are cooked. move the veggies apart, add soya sauce and fry till it gets evaporated, as shown in the pic below. Now add capsicum and fry for two mins.

  • Add boiled rice, sprinkle pepper powder and mix it well the veggies and fry the rice for 3-5 mins. Add chopped greens from spring onion, mix well. off the gas and serve hot.


SUGGESTIONS
  • Any kind of rice can be used for fried rice, i have used jeera rice.
  • Green chili sauce can also be added when mixing the rice according to the taste.
  • Do not add soya sauce directly to the veggies, since it will change the color of the veggies into black.
